Pineapple Fritters

Ingredients for batter:

cup flour |

tablespoons sugar |
| ½ |
teaspoon salt |
| 2 |
eggs, yolks and whites separated |

Grated rind of 1 lemon |
| ½ |
cup milk |
|
Shortening or fat for deep-frying |

Pineapple slices |
Sift flour, sugar, and salt together; add beaten egg yolks, lemon rind, and milk. Beat egg whites until stiff peaks form and fold into flour mixture.
Heat shortening or fat in a deep frying pan. Dip pineapple slices in batter and fry until golden brown. Drain on paper towels before serving.
