This is how they make mojitos at Mango’s Tropical Café in Miami.

6-8 lime wedges
2 teaspoons sugar
4 sprigs of mint
Ice
2 ounces Bacardi Superior
Soda water

In a tall glass, smash lime and sugar with a pestle (muddler). Add mint sprigs and crush them enough to get out the flavor but not break them. Add ice and rum. Shake well for at least 10 seconds to dilute sugar. Top off with soda water.
