The combined flavor of lime peel and cinnamon with caramel gives this dessert its special flavor.

Serves: 6

4 tablespoons cornstarch
6 egg yolks, beaten
4 cups milk
¾ cup sugar
1 2-inch piece cinnamon stick
Peel of half a lime
Caramel topping


Dissolve cornstarch and beaten egg yolks carefully with milk, mixing thoroughly until mixture is smooth. Add sugar, cinnamon stick, and lime peel. Cook pudding in a double boiler, stirring  often. When pudding is thickened and cooked (about 15-20 minutes), remove cinnamon stick and peel, and spread pudding  onto an open platter and top with a few spoonfuls of caramel.
