Papaya, known by several different names in Latin America, is a good source of vitamin A. Try cutting it in different shapes, blending it into shakes, or baking it, as in this simple but tasty dessert.

Note: The Hawaiian papayas available in the United States are smaller than those from the Caribbean and Central America and yield only 4 slices.

Serves: 4
Serving size: 1 slice

1 medium peeled, sliced papaya
1/2 cup orange, apple, or lime juice
Ground cinnamon
1 cup reduced-fat vanilla ice cream

 

 

 

 

1. Heat oven to 350ºF. Place papaya slices on a nonstick baking sheet.
2. Sprinkle with juice and cinnamon and bake for 15 minutes.
3. Top each slice with 1/4 cup ice cream and serve.
