Papaya, known by several different names in Latin America, is a good source of vitamin A. Try cutting it in different shapes, blending it into shakes, or baking it, as in this simple but tasty dessert.
Note: The Hawaiian papayas available in the United States are smaller than those from the Caribbean and Central America and yield only 4 slices.

medium peeled, sliced papaya |
| 1/2 |
cup orange, apple, or lime juice |

Ground cinnamon |

cup reduced-fat vanilla ice cream |

Heat oven to 350ºF. Place papaya slices on a nonstick baking sheet. |

Sprinkle with juice and cinnamon and bake for 15 minutes. |

Top each slice with 1/4 cup ice cream and serve. |
