The results of the AARP Segunda Juventud Recipe Contest are in! Nearly 2,000 home chefs accepted our challenge to come up with recipes for totally original, healthful, economical—and absolutely delicious—main dishes.
And the winner is Roxanne Chan, 65, of Albany, California, who concocted her colorful and nutritious Spiced Rubbed Tilapia Fillets with Strawberry Avocado Salsa out of ingredients she bought during a seafood sale at her local supermarket, found in her pantry, and harvested from her backyard garden.
"At the time I was thinking about the contest, I still had strawberries," says Roxanne. "I'm constantly getting ideas whenever seasonal produce is coming. It gets my creative juices flowing."
Roxanne's prize: a $500 gift card to her favorite grocery store.
Veronica Callaghan, 46, of Glastonbury, Connecticut, won second place with her Sweet Chipotle Mango Chicken and Barley Salad.

Spiced Rubbed Tilapia Fillets With Strawberry Avocado Salsa
Serves: 4
Ingredients
Tilapia:

pounds tilapia fillets |
| 1/2 |
teaspoon chili powder |
| 1/2 |
teaspoon ground coriander |
| 1/2 |
teaspoon ground cumin |
| 1/2 |
teaspoon ground cinnamon |
Strawberry avocado salsa:
| 2 |
cups sliced strawberries |
| 1 |
avocado, diced |
| 1 |
tablespoon red wine vinegar |
| 2 |
tablespoons minced green onion |
| 2 |
tablespoons snipped cilantro |
| 1 |
teaspoon olive oil |
| 1/4 |
teaspoon crushed red pepper |
| 1/4 |
teaspoon salt |
| 1 |
clove garlic, crushed |
Garnish: Crumbled queso seco (cotija)
Preparation:

Rub the tilapia on both sides with the combined spices. |

Broil 4 inches from heat for 4 minutes, turning once or until the fillets test done. |

Combine ingredients for the salsa in a medium bowl until well mixed. |

Place tilapia on a serving platter; spoon the salsa over top, garnish, and serve. |
