Jose Rodriguez
serves this dish in his three Mexican restaurants in the Los Angeles area. He conceived the name of the dish, although it's not a tradition in the Mexican state of Tabasco. You can substitute salmon for mahi mahi.

Step 1: Cook the beans

Ingredients:

    24 ounces uncooked, dry black beans
80 ounces water
 ½ onion in one piece
3 sprigs epazote
salt and pepper to taste
 3 garlic buds

Preparation:

1.  Rinse the beans and cover with room temperature water overnight. Drain.

2.  Place the beans in a large pot and add the water, onion, and three garlic buds.

3.  Cook, covered, over medium heat for 90 minutes or until tender.

4.  Add more water, enough to cover the beans. Add three sprigs of epazote, salt to taste, and cook another 20 minutes. Set aside. 

Step 2: Fry the beans

Ingredients:

      ½ cup olive oil
6 tablespoons olive oil
 ½ cup onions, finely chopped
½ sweet red pepper (chile marron), finely chopped
1 cup tomato, finely chopped
 5 bay leaves
3 sprigs epazote
 3 sprigs of thyme
  salt and pepper to taste

Preparation:

1.  In a large pot, pour 1/2 cup of oil and cook until very hot. Then add the beans, stirring constantly for 7 to 8 minutes.

2.  In a separate pan, cook in 6 tablespoons of oil the following: a ½ cup of onions finely chopped, a ½ cup of sweet red pepper (chile marron), and 1 cup of tomato finely chopped. Add 5 bay leaves, 3 sprigs of epazote, and 3 sprigs of thyme.

3.  Pour the mixture over the beans and cook for 10 minutes, stirring constantly. Add salt and pepper to taste.

Step 3: Make a spinach sauce

Ingredients:

6 ounces olive oil or butter
salt and pepper to taste
5 garlic buds, finely chopped and sautéed
22-25 ounces spinach

Preparation:

1. Sauté the spinach in the oil with garlic.

2. Place the mixture in a blender.

3. Then return the mixture to the pan and cook for two minutes. Set aside.

Step 4: Cook the mahi mahi  

Ingredients:

      6 mahi mahi filets (salmon filets a good substitute)
olive oil

Preparation:

1. Brush each filet with olive oil. Cook each side for 2 minutes.

2. Open a filet to ensure it's cooked throughout.
 
Step 5: Serve the dish
 
Place a serving of beans on a dish as a bed for each filet. Then place a ring of spinach sauce around each bed.
